@Jetah Those are not coin sink mechanisms, it's just money being moved from a player to another. Money sink is a system meant to reduce inflation (as much as possible). Usually it's done by removing money from the server via NPC (ex: buying stuff from them or paying a fee to start a siege).
Anyway, we know that the game will have an item sink mechanism so crafting remains relevant, but we don't know how it will work in detail. Money sink is even a more obscure detail and since the game is quite early in development, I wouldn't be surprised if DS haven't thought about it yet.

We will have to hire some npcs as the pledge packages give us a few months of free carpenters
So I'm hoping they wont be huge money sinks ( because a few of us have permanent vip/carpenters)
We dont even know what mobs will be dropping currency, or if it will have to be crafted in a mint.
Maybe metals will be stamped in to coins
Having a raw value as smeltables like old gold coins used tooIf mineable currency was a limited resource this could be one way to stop inflation, like if this gold mine under this city has 3 years then it wont make anymore gold.
All metal that can be turned in to currency does not respawn.We wouldnt need a gold sink then
But who knows if npcs didnt disappear money when you spent gold with them, they used it to trade and have merchants caravans that players can rob
Players would have to have a limit to how much gold they can carry and banks have a risk of being robbed, to stop players that quit with huge sums of limited resource gold, from influencing the currency market when not playing for like a year

Might I suggest the most basic (and often hated) mechanic, gold> RNG item upgrade with chance of destruction?
Before you crucify me, think on it. What does EVERYONE want? Power. Money will burn like tinder, making crafters and crafting extremely important. I've never seen any other gold sink work, item repairs/durability loss failed way back in the time of UO.

@tiltowait Since the game is full loot pvp, no thanks because I don't wanna get raped by people who play all day every day and can afford to gank in maxed gear.
Imo the best solution is to have big fees for the guild events.

Money itself should be more spars to begin with, as only humanoid kinds of NPC will drop it. (still not sure if mining for actual materials to create money will be a thing)
Besides that, they can decide to put a hefty fee on creating portals for invasions (besides other materials required) and/or visiting asteroids
Don't forget that @Kralith"s Coffee will cost you an arm and a leg too. So you better start saving!

^ Right... 200h in and nobody will care about why does that toad boss drop sword pieces or how beautiful the tree cutting animation is, but I will be very annoyed if I need to waste 15min on a regear every time I get ganked because we don't have enough coins in game to use the marketplace since money are only dropped by humanoid mobs which are scarce. If I have 2-3h of game time per work day, I want to have fun not waste it on boring stuff. I hope they will focus more on quality of life features and smooth gameplay than on roleplay.

Has there even been any mention of a coin system? Since npcs don't drop coins how will coins get into the system? Npc missions? Crafting to sell to npcs?

PS: @Prometheus can you make some light on this? Are we going to have coins? If yes, have you decided yet how they will be obtained. If not, have you decided how will marketplaces work?
