Unique mounts

"Floating" mounts could be nice. Visually floating just a bit above ground, waving their wings (birds, dragons,...). Still mechanically counting as ground mounts.
My other thought are mounts that change appearance (a little bit) based on situation or location. Depending on climate, time of day, combat status, or something else.

I'd love to have a mammoth for a mount.

I don't care which book it's gonna be! All I want is for my future demon character, to ride that sucker through some human city!
