As you can see, more evolved ones enjoy a different, more sophisticated texturing, and cooler particle effects. Plus, even if it obviously doesn't show in an illustration, they also enjoy additional cute idle animations!

I thought the pets were more companion pets at this point. They aren't the fight in battles or riding pets from what I've seen on the posts.
