In your opinion what do you feel is an acceptable time to grind per day? I think they're doing some interesting stuff with the knowledge system and look forward to see what else they bring to the table over time. Player driven economies are great, they add a lot of life to crafters and merchants.

I'm not sure how they put together their item database but this could be as easy as defining items to sizes, and thus loot tables picking from those sizes as well as percentages. I, personally, prefer that mostly components drop and some mobs dropping other things. Being able to deconstruct items (including drops if the do full item drop) into components is also something i'd highly suggest.
The design should push to keep crafters relevant, and within the item cycle.

I think the amount of bugs are fine. Just make sure to capture the errors everyday/update “known” bugs so we can continue to iterate on what to test. As long as you fix them as we move from test phase to test phase I believe the entire community will understand. You’ve already planned hotfixes while this test phase goes. Just keep on doing the amazing job you are. I’m 100% satisfied and happy to take part in the experience. Thanks for all of the work you all are doing!
